Just a quick reminder that there is no Wednesday Workshop today.
I have just received a 9 day contract from 17th - 25th January for Scotch College - House Parent and Laundry Officer, which is just fancy talk for cleaner during their cricket competition!! This means that the workshops on 19th January and 25th January will have to be cancelled. Sorry for any inconvenience, but I can't pass up the opportunity to earn some extra cash, especially just after Christmas:-)
Thought I'd share with you one of the recipes from my New Year's Seafood Feast! They were all delicious, but this one was in my top 3, mmmm......
Marinated Cold Fish Salad
Serves 6
750g white fish fillets
3/4 cup white vinegar
1/4 cup sugar
2 tablespoons lemon juice
1 clove garlic
3 tomatoes, peeled and chopped (I used cherry toms instead!)
2 onions, thinly sliced
3 zucchini, thinly sliced
1 green capsicum, thinly sliced
1/2 cup black olives, pitted
DRESSING
1/3 cup white vinegar
1/4 cup oil
1/4 cup olive oil
1 tablespoon sugar
1 tablespoon chopped fresh mint
Place fish in large pan, cover with water, bring to the boil, reduce heat, simmer, covered, for about 5 minutes, or until tender; drain. Remove bones from fish, cut fish into large chunks.
Combined fish, vinegar, sugar, lemon juice and garlic in bowl; cover, marinade 30 minutes, drain. (I marinated longer than this, a few hours.)
Combine fish, tomatoes, onions, zucchini, capsicum, olives and dressing in a bowl. Refrigerate until serving time.
Dressing: Combine ingredients in a jar, shake well. (I made this the day before so the flavours were beautifully developed.)
The leftovers tasted even better the next day!!
